fatty pig + holiday cheer.

On a blistery winter evening, we took our seats for a barnyard feast of local vegetables and a healthy helping of lard. What I’m referring to is the pork from a rare breed of pig called Mangalitsa, whose thick layer of translucent fat is said to be more nutritious than olive oil.  ( Seems like an oxymoron, right?).  Farm to table dining at its finest.
